How We Make Mocaf Flour

Peeling & Cutting

Cassava harvested from farmers is sorted to select high-quality ones, then peeled and sliced.

Fermentation

The sliced cassava is then fermented using enzymes that are certified Halal.

Drying

After fermentation, it is dried until it reaches the specified moisture content standard.

Grinding

The dried cassava then ground with a mesh size of 100 and tightly packaged.

Mocaf Flour

Mocaf flour, short for Modified Cassava Flour, is a versatile gluten-free alternative derived from cassava roots. Unlike traditional cassava flour, mocaf undergoes a unique fermentation process that enhances its texture, flavor, and nutritional profile.

This process not only reduces the characteristic cassava odor but also results in a lighter, milder taste that seamlessly integrates into various recipes. Mocaf flour is an excellent choice for baking, thickening, and cooking, offering a similar consistency to wheat flour without the gluten.

How We Make Coconut Flour

Peeling & Cutting

Remove coconut meat from the hell, and peel off the brown layer (paring), and wash the white kernel to ensure it's clean and ready for processing.

Fermentation

Slice the coconut meat into smaller pieces and dry them at 50°C to reduce moisture while preserving the nutrients and flavor.

Oil Extraction & Grinding

Press the dried coconut pieces to extract oil, leaving defatted solids, which are then ground into fine coconut flour.

Packaging

We pack our coconut flour in moisture-proof packaging to maintain its freshness and quality for storage or distribution.
